Butter Chicken, or Murgh Makhani, was born in the 1950s in Delhi, India — almost by accident.

The story begins with Kundan Lal Gujral, a chef and restaurateur at Moti Mahal. Faced with leftover tandoori chicken, he decided to repurpose it by simmering it in a velvety tomato and butter gravy, adding cream to mellow the spices. The result was a dish that took off across the globe.

Butter Chicken is known by different names across regions and menus:
Murgh Makhani (the traditional name in India)
Butter Chicken Curry
Makhanwala Chicken
Indian Butter Chicken (popular in Western recipes)
In some fusion kitchens, you’ll even see it reimagined as Butter Chicken Pasta, Pizza, or Pie!
